Tasty Vegan Pancakes

I had plan to make pancakes, but forgot to tell my husband that I needed eggs which he always eats for breakfast. So when you have no eggs and you need them for a recipe what is there to do? Well you can substitute 1 egg with 1 Tbsp of ground flaxseed and 3 Tbsp of water. It works great (well this is the only time I’ve actually tried it but it worked with this recipe). Technically there is an original recipe but I changed it so much that its not the same recipe at all. These pancakes are really delicious and were approved by a group of lovely ladies!


Tasty and Pretty Healthy Pancakes: serves 8

  • 1 cup unbleached all-purpose flour
  • 1 cup whole wheat white flour
  • 2 tablespoons of white sugar  or raw honey
  • 2 tablespoons of brown sugar
  • 1 tablespoon and 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon of pumpkin pie spice or just cinnamon
  • 2 cups Original Almond Milk
  • 1/2 tablespoon of vanilla extract
  • 1/4 cup coconut oil
  • 2 eggs (or 2 Tbsp flaxseed and 6 Tbsp water)

Directions:
Whisk together flour, sugar, baking powder, salt, and pumpkin pie spice in a bowl. In a separate large microwavable bowl whisk wet ingredients together. Microwave wet ingredients until coconut oil melts, about 1 to 2 minutes, and whisk again. Then slowly stir in flour mixture into wet mixture until just combined. Batter will still be a little lumpy. Cook pancakes over medium heat on a griddle and then enjoy with friends and family.

Side note: I had melted the coconut oil before mixing in with the wet ingredients and as soon as I put the almond milk in it harden since it was cold. Kinda a duhhh moment. That’s why it says to microwave the wet ingredients.

You could probably use real milk, but since I am going dairy free for a few weeks to see if that’s what I am allergic to I used almond milk. Also, you could probably make it all whole wheat. But since it was for a group of people, I didn’t want to shock them to much.

Eating healthy doesn’t have to be hard or gross. Just changing recipes like making half the flour whole wheat flour or adding flaxseed can make them better for you. Portion size still counts though, so eat in moderation! Hope y’all enjoyed!
