Let’s be honest here…. I really dislike fish (although shellfish is delicious)! My hubby, on the other hand, loves fish and could eat it every day. If I never had to eat it, I would definitely be okay. Yeah yeah, I know it’s really healthy (especially wild caught), but I can’t muster up liking it. That was until I made this one night!

My hubby came home and was so excited about some Alaskan, wild caught salmon he just bought from our local Co-op and asked me to cook it. I – being the good wife that I am – didn’t complain… or tell him how gross fish is… and just cooked it.

Just kidding, I totally complained and even thought about making myself something different. We can’t be perfect all the time right? I tossed some ideas in my head and randomly had the idea to make a crusted fish… really, I was hoping it would mask any fishy taste. But it ended up being delicious. We actually made it again a few nights later!

So, I may have been slightly converted… Maybe… Well, a least a lover of this recipe!

Tips For Making Almond Crusted Salmon:

  • Use almond flour for a quick and easy crust.
  • If you don’t have almond flour you can run almonds through a food processor.
  • After 15 minutes baking, set the oven to broil and allow the almond crust to get a little crispy. Watch closely so it doesn’t burn.
  • You can use pre-mixed Italian seasoning or make your own mix.

How To Make Almond Crusted Salmon

  1. Gather ingredients.
  2. Preheat oven to 400 degrees.
  3. Lay salmon scale-side-down on a baking sheet. Line with parchment paper or silicon baking mat.
  4. Squeeze lemon juice over salmon filets.
  5. Season with salt and pepper.
  6. In a small bowl, combine almond flour and Italian seasonings and sprinkle mixture evenly over fish.
  7. Drizzle melted coconut oil over fish.
  8. Bake at 400 degrees for 15-20 minutes.
  9. Set oven to broil and broil until the crust begins to brown, about 5 minutes. Watch closely so it doesn’t burn. Temperature of fish should be 165 degrees.

  • 1 Tbs Italian seasonings

    I slightly adapted mine based on what i had on hand! Instead of Italian seasonings iI simply used salt and pepper and I added a tablespoon of fresh parsley! Instead of lemon juice I mixed together equal amounts honey and mustard and brushed it on before I put the flour mixture! It was a huge hit with my family! Even my picky 4 year old ate it!
