Blackberry Protein Cookie Recipe

This blackberry protein cookie recipe makes a healthy cookie that tastes like warm blackberry banana bread, but in cookie form. Packed with protein, you could eat them for breakfast, and so yummy that you would never know they are gluten free, vegan, and don’t contain refined sugar. Two of these small protein cookies have almost 9 grams of protein!

Is there anything better than cookies? Yes! Healthy, delicious cookies that are made from whole foods, no refined sugar, and are packed with protein.

And guess what? These babies are also vegan.

These blackberry cookies are the perfect on-the-go snack for our family. The whole grains and plant protein help you feel full for so long. Like, I ate a few and felt so full for hours, and coming from a person who is always (and I mean ALWAYS) hungry, that says a lot.

The sweet banana-blackberry flavor makes it an easy pick for the kids. And I’m happy that they are filling their bellies with healthy ingredients.

September in Oregon means fresh blackberries are starting to wind down. You can still find juicy berries to pick at your local farms, but luckily, you can find frozen ones all year round. So even if it is the middle of winter, you can still get the benefits of sweet summer Oregon blackberries.

Adding our blackberries gives this protein cookie recipe a sweet and mild berry flavor that compliments the banana, vanilla, and cinnamon so well. You have to try this protein cookie recipe. So yummy!

Tips for making this protein cookie recipe:

  • Cookies need to be cooled completely before eating.
  • You could definitely add some chocolate chips or nuts to these cookies to make them even yummier.
  • This recipe calls for vanilla pea protein. Another vanilla protein powder may work, but I have not tried it (and depending on the protein you use, the cookies may no longer be gluten free/refined sugar free/vegan). If you do, make sure to pop back here and let me know how it goes.

  • Bowl or large glass measuring cup
  • Silicon spoon or spatula
  • Measuring cups and spoons
  • Fork
  • Cookie sheet
  • Parchment paper

Ingredients in Blackberry Protein Cookies

Blackberries – fresh or frozen (slightly thawed) will work

Almond meal – adds protein, fat and a yummy texture

Almond butter

Oats – gives it a yummy, oaty texture

Chia seeds – these are used in replace of eggs to make this recipe vegan. Chia seeds also contain a good amount of protein and omega 3s.

Milk of choice

Banana

Cinnamon

Vanilla Pea Protein – there is just enough to taste the vanilla, but not enough for you to notice it is there.

Vanilla extract 

Salt

These ones are! When it comes to the healthiness of something, I always like to look at the ingredients. Since these cookies are made from whole foods and no refined sugar or flour, they are a great, healthy treat.

Yes, you can. You do have to be careful to make sure you are not adding too much protein powder to recipes. Too much protein powder can leave you with a bad-textured product that may feel gritty when you eat it.

How To Make This Blackberry Protein Cookie Recipe:

  1. Take out blackberries to start thawing.
  2. Preheat oven to 350 degrees.
  3. In a bowl, add chia seeds and milk of choice. Allow to sit for 10 minutes.
  4. Place parchment paper on a cookie sheet.
  5. When chia seeds and milk have become a thick gel, add a banana and smash it with a fork until there are very few banana chunks left.chia seed "egg" in a pyrex dish and a banana being smashed into the chia seeds
  6. Add in vanilla, a dash of salt, coconut sugar, almond butter, vanilla protein powder and cinnamon. Mix well.vegan protein powder in in a glass measuring cup
  7. Mix in oatmeal and almond meal. It will be the consistency of a really thick cookie dough batter.pyrex glass measuring cup filled with ingredients - adding oatmeal
  8. Then, add semi-thawed or fresh blackberries. I like to mix them in and try to smash the blackberries into tiny pieces.
  9. Spoon cookie dough onto parchment-lined cookie sheet and spread out into small circles using the back of the spoon. This recipe should make about 12 cookies. Eat any remaining cookie dough with spoon. Just kidding; you don’t have to but, it is really delicious.
  10. Bake for 20-25 minutes until they start to turn golden brown. Allow to cool completely. Stick them in the fridge if you are impatient.
  11. Enjoy.

  • 1/4 cup milk of choice
  • 2 tbs chia seeds
  • 1/4 cup coconut sugar
