Sourdough blueberry muffins make a healthy breakfast or a hearty, delicious snack.



Fermented Sourdough Blueberry Muffins  (Optional Step)

The grains are fermented with sourdough starter and naturally sweetened with honey to make a fluffy and moist muffin.

Fermented grains are easier to digest and are more nutritious than unfermented grains

– 1/2 cup sourdough starter active or discard – 1.5 cups all purpose flour – 1/3 cup butter melted – 3/4 cup honey – 2 eggs – 3/4 tsp baking soda – 1/4 tsp salt – 1 tsp vanilla – 1 cup blueberries  – 1 tsp flour optional

Step 1

Mix together melted butter, honey, flour, and sourdough starter. Ferment if desired. Add vanilla extract, baking soda, eggs, and salt to the batter.

Once the batter is mixed well and no large lumps remain, add blueberries.

Step 3

Gently fold the blueberries in.

Spoon into muffin tins equally. I like to do this using an ice cream scoop. And bake.
