Raspberry Orange Muffins {Paleo}

These quick and easy raspberry orange muffins are delicious! Light and sweet. You would never guess they grain free, dairy free, and paleo.

Ingredients

  • 2-1/2 cups almond flour
  • ¾ tsp baking soda
  • ½ tsp sea salt
  • 3 large eggs
  • cup mashed very ripe banana
  • 2 Tbs honey
  • 2 Tbs coconut oil melted
  • 1 tsp vinegar white or cider
  • 1 tsp vanilla extract
  • Zest from 1 orange
  • 1 cup raspberries

Instructions

  1. Preheat oven to 350F. Oil well or line 10 cups in a standard 12-cup muffin tin.
  2. Place eggs, banana, honey, oil, vinegar, vanilla extract, and orange zest in a mixer and whisk on low setting until combined.
  3. In a medium bowl, whisk together almond flour, baking soda, and salt.
  4. Slowly add dry ingredients to the wet ingredients until they just come together. Be careful not to over mix.
  5. Evenly spoon batter into the muffin tins.
  6. Bake for 14 to 18 minutes until they start to turn golden brown and you can insert a toothpick and it comes out clean. Allow the muffins to cool for 30 minutes and enjoy your tasty little creations.
