Italian Rice Dish

Quick and easy Italian rice skillet backed with vegetables makes the perfect weeknight dinner.

Ingredients

  • 1-2 tbs butter or oil
  • 4 links chicken sausage use vegan sausage to make it vegan or skip
  • 2 cups rice cooked
  • 1 bunch asparagus chopped
  • 1 onion chopped
  • 1/2 tbs dried oregano
  • 1 cup pasta sauce
  • 2 cups fresh spinach or 1 cup frozen spinach
  • salt and pepper to taste
  • 1 handful fresh herbs parsley, oregano, thyme etc.

Instructions

  • Make rice following package directions (you could do this earlier).
  • Heat a large skillet with a tablespoon of butter or oil.
  • Chop onion and slice sausage into half inch pieces. Toss into skillet and cook for 4 minutes or until onion starts to
  • Add chopped asparagus, tomatoes, and sauce. Cook for about 5 minutes.
  • Stir in rice.
  • Add fresh spinach (or frozen) and herbs. Season with salt and pepper.
  • Top with cheese (optional) and serve.
