Vegan Pumpkin Spice Latte
Delicious fall classic made vegan.
- 1 cup strong coffee
- 3/4 cup milk alternative I use a little less than 3/4 cup of coconut milk and add a spoonful of coconut cream
- 2-3 tbs maple syrup
- 1 tsp vanilla extract
- 3 tbs pumpkin puree
- 1/2-1 tsp pumpkin pie spice just depends on how strong of a pumpkin spice flavor you like. I use 1 tsp.
- 1/4 cup coconut whipped cream
Make 1 cup strong coffee.Place milk , pumpkin puree, maple syrup, and pumpkin spice. Gently whisk occasionally until it begins to lightly boil. Pour coffee into a mug. Take off heat. I only use about half of the pumpkin cream mixture and put the other half in the fridge for the next day. Dollop on coconut whipped cream and sprinkle more pumpkin spice on top. Enjoy the wonderful taste of fall.
