Ingredients

  • 1/4 cup milk of choice
  • 2 tbs chia seeds
  • 1/4 cup coconut sugar
  • 2 tbs almond butter
  • 1/2 tsp vanilla extract
  • 3 tbs vanilla pea protein powder
  • 1 medium banana
  • 3/4 cup almond meal
  • 1/4 cup old fashioned oats
  • dash salt
  • 1 tsp cinnamon

Instructions

  • Take out blackberries to start thawing. Preheat oven to 350 degrees.
  • In a bowl, add chia seeds and milk of choice. Allow to sit for 10 minutes. Place parchment paper on a cookie sheet.
  • When chia seeds and milk have become a thick gel, add a banana and smash it with a fork until there are very few banana chunks left.
  • Add in vanilla, a dash of salt, coconut sugar, almond butter, vanilla protein powder and cinnamon. Mix well.
  • Mix in oatmeal and almond meal. It will be the consistency of a really thick cookie dough batter.
  • Then, add semi-thawed or fresh blackberries.
  • Spoon cookie dough onto parchment-lined cookie sheet and spread out into small circles using the back of the spoon.
  • Bake for 20-25 minutes until they start to turn golden brown. Allow to cool completely.
