Easy Loaded Baked Potato Soup

Loaded Baked Potato Soup is one to hit the spot. Creamy chicken broth is simmered with chunky potatoes, bacon, and cheese.

INGREDIENTS

- Bacon - Flour - Dried Basil - Chicken Broth - Potato - Half and half - Cheddar cheese - Parsley

In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon of drippings. Set bacon aside.

Saute the onion and garlic in the drippings until tender. Stir in flour, salt, basil, and pepper; mix well.

Gradually add broth. Bring to a boil; boil and stir for 2 minutes.

Add the potatoes and bring to a simmer. Cook until fork tender. If you are using already baked potatoes they will just need to be reheated rather than cooked already through.

Add cream and allow it to heat without bringing it to a boil.
