Pumpkin Spice Granola

This healthy pumpkin spice granola recipe is a naturally sweetened and salty snack that is packed full of fall flavors..

I love this homemade pumpkin granola recipe. It works beautifully with milk, yogurt, on top of ice cream, or by the handful.

INGREDIENTS

- Oats - Pumpkin seeds - Chia seeds or flax seeds (optional) - Pumpkin pie spice - Maple syrup or honey - Oil - Salt - Vanilla extract - Optional add-ins (dried fruit, chocolate chips, coconut, etc)

In a bowl, mix together the oats, pumpkin seeds, and flax seeds (or chia seeds). In a small bowl, whisk together remaining ingredients and add to the oat mixture.

Stir until well combined and coated.

Spread an even layer onto a parchment lined sheet pan. Bake for about 30 minutes at 325 degrees F, stirring halfway through.

Allow to cool and then add in any additional add-ins you desire. Dried cranberries or apples, coconut flakes, or chocolate chips would be yummy.

Stir together well, breaking up any large chunks. Store in an airtight container.
