Homemade Granola Bars - Paleo, DF, GF, Grain, & Nut Free

These sweet and salty granola bars are a simple and healthy treat that are perfect for those with allergies - paleo, dairy free, gluten free, grain free, and nut free!

Ingredients

  • 2 cups sunflower seeds separated
  • 1 cup unsweetened coconut flakes
  • 1 cup pitted dates
  • 3 squares of dairy free chocolate
  • 1/3 cup honey
  • 2 Tbs coconut oil softened or melted
  • 1/2 tsp vanilla extract
  • a pinch of salt

Instructions

  • Place dates and chocolate squares into a food processor and pulse until finely crumbled.
  • Add in 1 cup of coconut flakes and 1 cup of sunflower seeds and process until finely chopped (almost smooth).
  • Add in remaining sunflower seeds and pulse 1-2 times quickly to leave some larger chunks.
  • In a separate large bowl, whisk together honey, coconut oil, vanilla extract, and salt.
  • Add sunflower seed mixture into wet ingredients and combine well.
  • Pour mixture into an 8x8 or an 8x6 pan lined with parchment paper and press down with hands into each corner so that they are evenly distributed.
  • Top the granola bars with extra coconut flakes and chocolate shavings (optional).
  • Cover and refrigerate for 15 minutes before cutting and serving.
  • Store in the refrigerator.
