Homemade Granola Bars - Paleo, DF, GF, Grain, & Nut Free
These sweet and salty granola bars are a simple and healthy treat that are perfect for those with allergies - paleo, dairy free, gluten free, grain free, and nut free!

Ingredients

cups
sunflower seeds
separated
1
cup
unsweetened coconut flakes
1
cup
pitted dates
3
squares of dairy free chocolate
1/3
cup
honey

Tbs
coconut oil
softened or melted
1/2
tsp
vanilla extract
a pinch of salt
Instructions
Place dates and chocolate squares into a food processor and pulse until finely crumbled.
Add in 1 cup of coconut flakes and 1 cup of sunflower seeds and process until finely chopped (almost smooth).
Add in remaining sunflower seeds and pulse 1-2 times quickly to leave some larger chunks.
In a separate large bowl, whisk together honey, coconut oil, vanilla extract, and salt.
Add sunflower seed mixture into wet ingredients and combine well.
Pour mixture into an 8x8 or an 8x6 pan lined with parchment paper and press down with hands into each corner so that they are evenly distributed.
Top the granola bars with extra coconut flakes and chocolate shavings (optional).
Cover and refrigerate for 15 minutes before cutting and serving.
Store in the refrigerator.
