Sheet Pan Chicken Fajitas

Ingredients

  • 1.5 lbs chicken breast or thighs
  • 1 onion
  • 3 peppers I used 3 different colors, but use whatever color you like
  • 1/8 cup olive oil give or take
  • 6-8 Tortillas
  • Extra fajita toppings

Fajita Seasoning

  • 1.5 tsp cumin
  • 1/8 tsp cayenne leave out if you don't want any spiciness
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees. Slice onions, peppers, and chicken to roughly the same size and thickness.
  • Spread ingredients out evenly on a baking sheet. Drizzle with olive oil and fajita seasoning and toss.
  • Place in the oven for 25-35 minutes until chicken and peppers start to brown a little and reaches an internal temperature of 165.
  • Serve with your favorite fajita toppings: guacamole, cilantro, green onions, cheese, hot sauce, whatever your heard desires.

Make this paleo or Whole30 by omitting the tortilla
