Create your topping by adding the oats, flour, sugar, cinnamon, and salt to a bowl, and then stir to combine. Add melted butter and mix together. Set aside.
Rinse your fresh strawberries, then pat them dry. Remove the tops off the berries and cut in halves or quarters. You can leave small strawberries whole.
Place the berries in a separate bowl, then sprinkle the sugar, cornstarch, and vanilla over the top of them. Stir well.
Pour your strawberry filling into a baking dish, and then sprinkle over the crumble topping.
Place your crumble in the oven and bake for 45-50 minutes* or until the topping is golden brown and the filling is bubbly.
Allow to sit for a few minutes and then serve.
Notes
Use Fresh, Ripe Strawberries: For the best flavor, use fresh strawberries. Fresh fruit is always best in a fruit crumble. It's even better if your fresh berries are in-season! You can also use frozen strawberries, but make sure to thaw and drain them before using to avoid excess moisture.
Adjust Sweetness: Depending on the sweetness of your strawberries, you may want to adjust the amount of sugar in both the filling and the topping.
Make it Gluten-Free: To make the crumble gluten-free, swap the all-purpose flour for a gluten-free flour blend and ensure that your oats are certified gluten-free.
Butter Alternatives: If you're looking for a dairy-free version, you can substitute the butter with a plant-based butter or coconut oil.
To brighten the flavor: you can add a tablespoon or two of freshly squeezed lemon juice and a pinch of lemon zest to your berries after you cut them.
