Sausage Potato Soup

This hearty and easy sausage potato soup is a delicious, healthy, high protein meal that will satisfy on a cold, chilly night… or anytime, really, if you’re a soup lover like me. Sausage, potatoes, beans, and veggies simmered in a flavorful broth is the perfect meal.

Soup = life in my book!

It is probably my favorite meal… and probably my husband’s least favorite. I love a good, hearty bowl of brothy soup. But, it also has to be chicken broth or vegetable broth since beef broth freaks. me. out. yo. Yeah, not sure why…

My husband, on the other hand, dislikes soup because he complains he is still hungry after eating it. But not with this hearty sausage potato soup!

Between the potatoes, beans, and lots of veggies, it’s thickness will fill even the hungriest of bellies. Pair that with good’ole crusty bread and butter and you have a winner.

Plus, it comes together in no time, especially if you have an Instant Pot.

I created this video during nap time, and it literally felt like I was racing against the clock. By the time the Instant Pot came to pressure and the clock was ticking, I was just hoping and praying that it would be finished before the kids woke up.

As the clock hit two minutes, I could hear the baby stirring, and by one minute, it was full blown screams.

Of course, I didn’t want him to wake up his sister, so I rushed in to swoop him in my arms and the rest of the video and pictures were taken with him right next to the set. It was sweet.

So, please excuse my not absolutely perfect pictures. The cute baby was gurgling and distracting me with his adorable giggles. I blame him.

Then, while editing the video, I asked August if she wanted to watch it with me.

It was hilarious and I wish I would’ve caught it on film.

Tips For Making This Recipe:

  • Don’t have an Instant Pot? No worries! I’ve actually made this soup lots of times in a dutch oven, big soup pot, or even in the crock pot. This was actually the first time I tried it in an Instant Pot. So, below I will include the instant pot recipe and the classic version.
  • If you want to make this in the slow cooker, brown the meat in a skillet or large saucepan before adding it to the slow cooker and add the beans in the beginning. Right before seving, stir in the spinach.
  • This is the perfect comforting soup to serve for busy weeknights that the whole family will love. You could even make it over the weekend and eat leftovers for a super fast meal or lunch throughout the week.

Ingredients:

Oil or butter: I like to use olive oil, coconut oil, or avocado oil as these are less processed.

Sausage: I used breakfast sausage, but you could also use spicy Italian sausage or sweet Italian sausage. I prefer pork sausage, but you could also substitute with chicken sausage, or turkey sausage if desired.

Potatoes: Red potatoes, russet potatoes, yellow, potatoes, or Yukon gold potatoes will work. I like to use ones with thinner skins.

Chicken broth: I prefer this homemade bone broth that is super simple to make. This rich broth makes it super nourishing.

Water

Italian seasoning

Salt and black pepper to taste I add lots of salt because salty soup is my favorite.

White beans: Drained and rinsed white beans great northern or cannellini work well. You could also use dried beans that have been soaked and cooked.

Spinach: Frozen or fresh spinach will work. Or leave it out.

FAQ

What potatoes work well for soup?

Yukon Gold, Red or Russet potatoes work well in soup. It’s really up to your preference! I used red potatoes in this recipe but honestly it’s just what I had lying around in my pantry. 

Why does my potato soup have no flavor?

It probably needs more salt! Potatoes and soup (especially if using homemade broth) in general need a decent amount of salt to bring out the flavor. You can also add garlic, and more herbs and spices to bring out the flavor.

Should I soak potatoes before putting them in soup?

No. That is not necessary. During frying, many people like to soak the potatoes to remove extra starch, but since these are just being boiled they do not require soaking.

What makes potato soup thick?

The naturally occurring starch in the potatoes is what thickens it up.

I love this dish with a simple side of bread and butter like this sourdough skillet bread, or rosemary spelt rolls.

I also really like to serve this with salad. Two of my favorites are Kale and apple salad and chopped salad.

How To Make Sausage Potato Soup: Two Ways:

Instant Pot Sausage Potato Soup

Set the instant pot to sauté. Add your olive oil, sausage and whichever seasonings you prefer and brown the meat. I used breakfast sausage in this recipe but you could use spicy sausage if you like a little bit of heat. I also chose to use avocado oil in this recipe but if you wanted a little bit more richer flavor you could choose to use butter or ghee instead of oil. 

Remove the sausage once it’s been fully cooked. 

Chop up your carrots, celery, onion and potatoes. 

Add in the carrots, celery and onion and sauté them for a few minutes. Then add in your potatoes, broth, water, salt, pepper and any other seasonings. 

Once everything is in your instant pot, close the lid and make sure the lid is sealed. Set to manual, high pressure and set a timer for 10 minutes. Once the timer goes off, quickly release the pressure and reset the instant pot to sauté. 

Lastly, add in your spinach and beans, give it a good stir, and allow the soup to come back to a boil. 

Let cool before serving and enjoy! If you like it spicy, add a kick with some red pepper flakes.

On The Stove-Top

In a large pot or dutch oven over medium heat, add a little oil, sausage, and seasoning. Brown the sausage, breaking it up. Once it is almost cooked through, remove and set aside.

While the sausage is cooking, chop up your carrots, celery, onion and potatoes. 

Add in the carrots, celery and onion and sauté them for a few minutes. Then add in your cubed potatoes, broth, water, salt, pepper and any other seasonings. 

Bring to a simmer and simmer for about 15-20 minutes until the potatoes are soft.

Lastly, add in your spinach and beans and allow the soup to come to a boil. 

To make this into a creamy soup, add a drizzle of heavy cream and top with a little sour cream before serving.

Storage:

Store in an airtight container in the refrigerator for up to four days. 

This sausage soup doesn’t freeze well because it contains potatoes. Potatoes can become dry and grainy after being frozen and thawed.

  • Cheese: Mozzarella, sharp cheddar cheese, or parmesan cheese would all be delicious.

  • Heavy cream: Drizzle over a little cream to make this into a creamy potato soup

  • Set Instant Pot to sauté.

  • Close lid, making sure the valve is set to sealed.
  • Set to manual, high pressure for 10 minutes.
  • Once the timer goes off quick release the valve open and set to sauté again.
  • Add spinach and beans. Allow to come to a boil and enjoy.

Classic Instructions

  • In a large pot over medium heat add oil and sausage.
  • Cook until sausage is browned and place on a clean plate.
  • Add in carrots, celery, and onion and sauté for a few minutes.
  • Add potatoes, broth, water, salt, pepper, and seasonings, bring to a low boil.
  • Boil for about 10-20 minutes until potatoes are soft.
  • Add spinach and beans. Allow to come back to a boil and enjoy.

Notes

  • If you want to make this in the slow cooker, brown the meat in a skillet or large saucepan before adding it to the slow cooker and add the beans in the beginning. Right before serving, stir in the spinach.

    I made tonight with leftover wild rice bratwurst. I skipped the beans. Also I used baby yellow potatoes which were sliced very thin. . I just up what I had in the fridge. It was very good!

    Great potato soup recipe!
    I’m now gonna try to make it before my GF gets home (I’m in the dog house for forgetting our anniversary!!!) This is her favorite so hopefully it will do the trick.
