July means summer feels officially here in Oregon. The weather is warm, the garden is bursting with fruits and vegetables, and fresh salad is on the menu weekly.

Plus, it’s officially tomato season. One of my favorite seasons, and I’m always trying to find new fun ways to use up fresh summer tomatoes.

Typically I grow a variety of juicy heirloom tomatoes, cherry tomatoes, grape tomatoes, and paste tomatoes for canning.

Now, I’m not your typical salad type of person, but this classic caprese salad made with a simple twist from the burrata really hits the spot. It is the ultimate summer salad. 

It’s the perfect way to grace your dinner table.

Burrata is a semi-soft Italian cheese made from mozzarella and cream that has an outer skin and creamy center.

After patting them dry gently with a clean kitchen towel or air dry, cut them into evenly sized slices or chunks, depending on your preference. Remember, the presentation of the salad can greatly enhance the overall dining experience.

Remove the fresh burrata cheese from its packaging and place it on a cutting board.
