It’s officially southern Illinois summer here…aka hot and muggy! And this healthy dessert is perfect for the warmer weather! When I made these last week my husband wouldn’t even let them set up before he started eating them and then I had to beg him not to eat them all! So let’s just say these are a family favorite now!

Frozen Banana Split Bites

Step 1: slice up some bananas and place on cookie sheet. Then slice small strawberries into circular slices and place on top. Stick a popsicle stick into the strawberries and bananas and freeze for at least 30 minute.

Step 2: While the bananas and strawberries are freezing, make chocolate magic shell (recipe below).

Step 3: Take strawberries and bananas out of the freezer and dip them into the magic shell. I like to dip, let the chocolate harden, and dip them again. Depending on how thick the chocolate coat is going on, I might do it up to 3 times.

Step 4: Place in freezer for at least 2 hours. After they are completely frozen, stick them in a zip lock bag in the freezer and enjoy later (if you can hold out)!

  • While the bananas and strawberries are freezing make the magic shell by mixing coconut oil, coco powder, sugar, vanilla extract, and salt.
  • Take strawberries and bananas out of the freezer and dip them into the magic shell. I like to dip, let the chocolate harden, and dip them again. Depending on how thick the chocolate coat is going on I might do it up to 3 times. Dip in coconut or nuts if desired.
  • Place in freezer for at least 2 hours. After they are completely frozen stick them in a zip lock bag in the freezer and enjoy later!

    How long do you think they’ll last in the freezer? Think I can do them a week before an ‘ice cream’ theme party? Such a great idea!
