Turkey Spinach Meatballs

I got this recipe from our local Neighborhood Co-op deals newsletter. It was really tasty! I even made some burgers out of it because I guess my hubby doesn’t like meatballs. Learn something new about each other everyday. Fun fact I don’t like most kinds of meatballs either but these were different than “normal” cocktail meatballs. They are made with turkey, healthy ingredients, and don’t come with a gross sauce.

Here are the ingredients:

  • 1 lb ground turkey
  • 2 Tbs fresh garlic
  • 1 10 oz package of frozen spinach, thawed and drained
  • 3 Tbs tomato sauce
  • 1/2 cup onion, minced
  • 1 egg, lightly beaten
  • 1/2 cup breadcrumbs
  • 1 tsp dry oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions:
Preheat oven to 375 F. In a large bowl mix all the ingredients together well with hands of course! Form 1 1/2 inch balls or burgers and put them on a sheet pan.  Bake for 25 minutes turning them a few times so they get brown all around. Make sure the internal temperature is about 175 F.

Serve with pasta and some delicious pasta sauce. Enjoy!

  1. Oh, this looks really good. I’d have to find a substitute for the breadcrumbs, because I do follow a gluten free diet…but these look FABULOUS!!!! I also like buffalo meat, too. It’s healthy and by federal law protected from things like antibiotics and hormones 😉 🙂 Oh, another yummy combo, if you want to make easy hors-oeuvres (spelling?) is a chunk of pineapple and meatball held together with a toothpick…so tasty good!!!     1. Heather you could probably make your own bread crumbs from gluten free bread that’s going a little stale! I’ve never had bison and might have to try it one of these days. And that does sound very delicious! Thanks for the idea!
