Lately, I have been doing lots of studying on heeling auto-immune diseases. I’m a total food nerd and love researching and reading others who have healed themselves with diet. I’ve only heard a little bit about the Gaps Diet and the Paleo Autoimmune Protocol and it sparked my interest. See my hubby has an auto-immune disease and I have food allergies which I think is dairy, but honestly could be something else. The idea that you can possibly heal these conditions by food is amazing to me. So I have been trying to convince my hubby and make small changes to transition over to the diets. We’ve been limiting gluten, adding in bone broths, adding in more healthy fats (coconut oil and grass fed butter), and increasing grass fed meat intake. My hope is that we can heal our guts and then possibly reintroduce some of foods we enjoy (cheese is my hubby’s kryptonite).

I’m not a huge baker, but my hubby said he wanted snacks that would be easy for him to take on the road (he pretty much lives in his car for work). I modified this recipe from Power Hungry and it turned out absolutely delicious! You would never guess that it is dairy free and grain free!! Light, sweet, and buttery! These will definitely hit the spot.

Raspberry Orange Muffins {Paleo}

These quick and easy raspberry orange muffins are delicious! Light and sweet. You would never guess they grain free, dairy free, and paleo.

Ingredients

  • 2-1/2 cups almond flour
  • ¾ tsp baking soda
  • ½ tsp sea salt
  • 3 large eggs
  • cup mashed very ripe banana
  • 2 Tbs honey
  • 2 Tbs coconut oil melted
  • 1 tsp vinegar white or cider
  • 1 tsp vanilla extract
  • Zest from 1 orange
  • 1 cup raspberries

Instructions

  • Preheat oven to 350F. Oil well or line 10 cups in a standard 12-cup muffin tin.
  • Place eggs, banana, honey, oil, vinegar, vanilla extract, and orange zest in a mixer and whisk on low setting until combined.
  • In a medium bowl, whisk together almond flour, baking soda, and salt.
  • Slowly add dry ingredients to the wet ingredients until they just come together. Be careful not to over mix.
  • Evenly spoon batter into the muffin tins.
  • Bake for 14 to 18 minutes until they start to turn golden brown and you can insert a toothpick and it comes out clean. Allow the muffins to cool for 30 minutes and enjoy your tasty little creations.

    Hi! I found you somehow on Pinterest…I can’t remember how and I don’t care. I have been going through your website and am especially interested in the homemade makeup. I’m going to make some homemade foundation! I don’t wear much, but it will be interesting to try it out. One day I might have enough guts to try the mascara! I saw this post and am intrigued. I have MS (one of the autoimmune diseases) and I think I have a dairy sensitivity. I always have, like, a major buildup of snot and mucus and I am beginning to think it’s from what I eat…I am definitely going to look into both the gaps and the autoimmune protocol. Thanks! Oh and these muffins look pretty good. Trying to go natural seems so overwhelming. I’m going to start buying one or two things (like the coconut oil or almond flour) every shopping trip until I have a nice little cabinet of gluten free items!
