Homemade Almond Butter Recipe

This homemade almond butter recipe is a little different than other recipes you may come across. It is delicious and creamy with just a hint of sweetness from the dates. This almond butter with dates is super easy to make and oh so delicious. Follow my tips below.

On May 1st, myself and a bunch of my friends started Whole30. You can read more about that here. On Whole30, you can’t have legumes, including peanuts (peanuts are legumes and not nuts), which means no peanut butter.

When I told my hubby this I think he almost didn’t do it/had a heart attack/cried a little.

That guy loves peanut butter and eats it pretty much every day!

But then I discovered almond butter and let me tell you, it was a complete game changer for our family especially for my husband.

He has been slathering it on everything! Literally everything.

This morning he put it on frozen berries. That seemed like a weird/gross combination, but he thought it was great!

Whatever works I guess. 

This recipe was inspired by my friend Laura. She did Whole30 in the past and made a similar butter and she absolutely loved it.

I figured I give this recipe a try when I heard her rave about it.   

Tips For Making Homemade Almond Butter

  • I would definitely recommend using a food processor or high powered blender for this recipe. It will make the butter the consistency you want and it will be less time consuming. Depending on what brand you have, you may have to blend the butter more or less. It just depends on what you like.
  • It will stay well for about a two to three weeks in the refrigerator.
  • You can definitely buy plain almond butter at the store if you don’t want to blend the almonds yourself, and just add it to a blender with a few dates. But I will say that it is so much cheaper (and tastier) if you make it yourself. Plus, it doesn’t cost an arm and a leg just to eat almond butter.

How long does almond butter last?

Almond butter lasts for two to three weeks in the fridge. I would recommend to keep in the fridge after you make it because it can go rancid quickly if you don’t keep it cold.

Is Almond Butter healthier than peanut butter?

They both are very close in nutritional value so there is not a huge difference if you eat one or the other. Almond butter is slightly healthier because it a little bit more vitamins, minerals and fiber while peanut butter has more protein than the former. 

What are the benefits for eating almond butter?

Almonds in general, have antioxidants from the Vitamin E as well as helping lower cholesterol. It also contains potassium and magnesium which helps with heart health as well.

What can you eat with almond butter?

You can make almond butter cookies if you want.

Like I said about my husband, you can virtually put homemade almond butter on anything. 

How can you tell when its rancid?

The fist indication would be that the spread would be hard and stiff rather than soft and creamy. A color change to a darker hue is another common indication with rancidity. If it smells off then I would suggest tossing the almond butter.

How to make this Almond Butter Recipe

About the Ingredients:

Almonds – I use raw unsalted almonds and toast them myself. This ensures consistency and I can decide how much salt to add.

Dates (pitted) – you can find these in the refrigerator section of your grocery store. Make sure to get the ones without the pit. Trust me on this.

Coconut Oil – helps the consistency an adds some extra healthy fat.

Salt – Brings out the sweetness of the dates and makes it so so yummy.

Directions:

  1. Preheat your oven to 350 degrees and spread your almonds out on a cookie sheet. Bake the almonds for 8-10 minutes.
  2. Once cooled, place in your food processor and add the rest of the ingredients. Blend until its smooth and creamy. Make sure to scrape down the sides occasionally.
  3. When the almond butter is completely smooth, blend for a few more minutes just to make sure you get the consistency you want. 
  4. Serve immediately or store in jars.

Creamy almond butter is thick and delicious with a hint a sweetness from the dates. Perfect peanut butter replacement. Beware you may get addicted.

Ingredients

  • 2 cups almonds
  • 1/4 cup dried dates
  • 2 tsp coconut oil
  • salt to taste

Instructions

  • Preheat oven to 350 degrees.
  • Spread out almonds on a cookie sheet and bake for 8-10 minutes.
  • Allow to cool, place in a food processor, and add coconut oil, dates, salt, and blend until smooth and creamy.
  • Scraping down the sides occasionally. Once it is completely smooth, blend for about 1-2 minutes longer. The whole process could take 5 to 20 minutes depending on your food processor.

  1. I make almond butter a lot and this tasted lovely with the addition of dates – however I would advise to add the dates once the nuts have been blended. If you add them with the nuts it gets too sticky and takes twice as long as liquify.

  2. Just made this recipe and upped the quantity of dates, well because who doesn’t love dates. I also added a 2 tsp of cinnamon for an extra kick. Then dyslexia set in and I read 2 TBS of coconut oil instead of 2 tsp. It still came out wonderful. I added 6 large medjool dates, it was about 1/2 cup. It is really delicioso!!
