These are really exciting cookies! Who knew cookies could be exciting? Well they have no added sugar (except from the chocolate chips), are gluten free, and made from whole foods. They are super quick to whip up, and you won’t feel gilty eating 1, 2, or 3 of them. I told my hubby I wouldn’t feel guilty eating all of them, but he insisted I shouldn’t and I probably would… We shall see!
Did I mention they are only four ingredients? Yes four! Oats, bananas for sweetness, an egg, chocolate chips, and a dash of salt but that doesn’t really count. That is it! Crazy right? These cookies would be great even as a grab and go breakfast. Fast, easy, and healthy.
4 Ingredient Healthy Chocolate Chip Cookies
- 1.5 cups of oats quick or traditional oats
- 1 cup of mashed very ripe bananas approximately 2 large bananas
- 1 egg
- Dash of salt
- 1/2 cup chocolate chips
Preheat oven to 350 degrees. Place peeled bananas in a bowl and mash with a fork or potato masher. Measure 1 cup of bananas and place in your stand mixer or a bowl. Add egg, salt, and mix well. Slowly mix oats into banana egg batter. If using traditional oats place in blender or food processor, and process for 30 seconds to a minute before adding to the batter. Fold in chocolate chips. Spoon cookies onto a greased cookie sheet or one lined with a silicon baking mat and bake for 15 minutes. Let cool and enjoy!
