The Best Coconut Granola

This coconut granola recipe is a balanced blend of crunchy and sweet, quickly making it my favorite. Oats are combined with shredded coconut, chia seeds and oil to make a delicious snack that you will find yourself making over and over again.
I LOVE granola. To a point where it is hard to put down. I can’t help but to keep going back for another bite, or maybe another bowl.
My mom makes the best homemade granola recipe. Salty, sweet, and crunchy. All the best things that snacks are made of.
So, one day when I reached to make that recipe, I eyed the shredded coconut in the back of the pantry. Surely these would pair perfectly together.
Lo and behold, they got married, and they lived happily ever after! Seriously, it is so good! This coconut granola is my new favorite version. But keep it on the down low so my mom doesn’t find out.
Eat it with a spoon, add it to some yogurt, serve it with some milk to make a healthy granola cereal, top it on a smoothie for some extra crunch, the possibilities are endless.

Tips:
- Make sure to mix it halfway through, otherwise some parts may become too dark.
- If you want a deeper coconut flavor, swap out the avocado oil with melted coconut oil.
- Line your pan with parchment paper (or use a silicon baking mat) for easy cleanup. The honey can make it tough to clean on an unlined baking sheet.
- You can totally customize this recipe. Add 1/2 cup-1 cup of your favorite nuts, like almond, pistachio, or walnut. If you are nut free (like myself), try pepitas or sunflower seeds.
Is granola healthy?
Many granolas can be crammed full of sugar and unhealthy ingredients. When you look at the health of a recipe, don’t just check the calories – look at the ingredients.
Choose healthier, unrefined, and not overly-processed oils like avocado, coconut, or olive (olive oil will lend a heavier olive taste).
Choose maple syrup or honey to sweeten, rather than refined sugar.

How To Make Coconut Granola
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
To a large bowl, add shredded, unsweetened coconut, oats, chia seeds, and nuts or seeds if you like.
In a liquid measuring cup, add oil (I like using avocado), honey, vanilla and salt. Mix well.
Pour liquid ingredients over dry and mix together well. Make sure all of the ingredients are well incorporated. You don’t want any dry spots.
Pour the oat mixture onto the parchment-lined baking sheet and spread out evenly.
Place in the oven and bake for 30 minutes. Halfway through, stir the granola and then spread it back out.
Allow to cool for a few minutes, then break apart. I recommend mixing it before it has completely cooled. If you forget to mix it, it will just cool in a giant pan-shaped block. It will still taste great, but it’s just hard to get it into small, bite-sized pieces.
Serve or store it for later.
Granola will keep for up to six months in an air tight container in a cool, dry place.
Other Add-Ins
- Nuts or seeds: walnuts, pecans, cashews, almonds, or sunflower seeds and hemp hearts would be delicious in this recipe.
- Chocolate chips (wait until after it has completely cooled)
- Dried fruit (wait to add until after the granola is completely cooled) – cranberries. blueberries. peaches. or chopped, dried pineapple would be tasty.
